About The Role 

To monitor the purchasing and costing of all Food and Beverage operational activities to minimize expenditure and drive productivity. 

 

What You’ll Be Doing

• Work with the IT team on system enhancements and changes as appropriate

  • Train the Operation teams on cost control and relevant systems and reports
  • Participate in regular stock counts, as well as conducting spot checks to ensure accurate inventory of both food and non-food items.
  • Work with Executive Chefs on the product development of new menus, ensuring accurate costing and sign off.
  • Keep records of product required per recipe and conduct regular spot checks to verify the accuracy of this data.
  • Produce regular reports for the business on product inventory, non-food inventory and wastage.Make recommendations to management to optimize business efficiency.
  • Ensure any variation in regular purchase items are approved as per schedule of authority.
  • Take action on requests from Supply Chain, such as new articles and aging analysis.
  • Verify accuracy of foreign shipments purchase orders.
  • Ensure inventory levels are maintained at agreed levels and highlight any deviations.
  • Audit the outlets receiving reports on a monthly basis.
  • Monitor purchasing budget compliance and highlight any discrepancies.

About You

Education/Certification and Continued Education

  • Graduate with tertiary qualification in Finance or Hospitality Management

 

Years of Experience

  • 5 – 7 years of relevant experience.

 

  • Computer Literate
  • Hospitality experience would be an advantage
  • Communication and Negotiation skills
  • Highly organized
  • Attention to detail
